Cabernet Sauvignon 2005
The 2005 vintage was characterized by unique climate conditions for the Cabernet Sauvignon grapes in Kedesh Valley, which reached prime vintage stature in balanced ripeness. The yield was low and its quality reflected all of its characteristics. The wine was barrel-aged in French Oak, most of them new, for a period of 20 months. Kedesh Valley wines develop slowly and reach their peak after 5 years.
Only 3,800 bottles of this year’s vintage were produced, each of which was individually numbered. The wine has an intense red color and the light flavors of spicy berries, combined with a delicate sweetness. The wine is balanced, full-bodied with a long finish.

The Cabernet Sauvignon was harvested in August at 26 Brix. The grapes reached excellent ripeness and phenolic maturity. Two days after immersion in low temperatures, the grapes were transferred to fermentation for 20 days in varying temperatures of up to 28 degrees Celsius. Full Malolactic fermentation was then carried out before the wine was transferred to barrel-age in a combination new, 1-2 year and 3-4 year old Seguin Moreau French oak. The aging period was 20 months.
