Cabernet Sauvignon 2006



The 2006 Cabernet is a true successor to the excellent 2005 vintage, and it too won a medal at the prestigious Golden Cluster competition.  With the 2006 vintage, the official Ramot Naftaly Winery was inaugurated in a large, full-capacity event.

The Cabernet Sauvignon is produced from vineyard grapes grown in Kedesh Valley, atop the Naftaly Mountains in the Upper Galilee. The unique location of the vineyard is highly beneficial in the winemaking process. The rich and fertile soil and special climate conditions of the area give the grapes their color, flavor and characteristics, each of which is perfect for producing the finest wine. In this particular wine, the yield was low and its quality reflected all of its characteristics.  The wine was barrel-aged in new French oak for a period of 20 months, and went through natural clarification processes, without filtration.

Production Process

The Cabernet Sauvignon was harvested in August at 25 Brix. The grapes reached excellent ripeness and phenolic maturity. Two days of immersion in low temperatures, 20 days of alcoholic fermentation and full Malolactic fermentation were carried out before the wine was transferred to barrel-age in French oak, mostly new.
