The 2009 vintage was a significant milestone, since it was this year that we started to make kosher wine.
The Shiraz grapes are grown in Kedesh Valley, an area where the weather conditions, particularly strong sun during the day and cold at night, are suitable for the grape’s development. These conditions are also responsible for the grape’s deep purple color and light aromas. The grapes were harvested by hand and the wine was barrel-aged in French oak for 10 months. The wine features the light aroma of dried fruits with raspberry and tobacco flavors, scented with the roasted oak. The wine’s flavor develops up to an hour after the bottle is opened. The wine is balanced and leaves a long flavor finish.

The grapes underwent cold immersion, and after a gentle pressing, were fermented for 10 days in increasing temperatures of up to 30 degrees Celsius. It then went though full Malolactic fermentation, and then was aged in new Seguin Moreau barrels, consisting of 50% French Oak and 50% American Oak.
