Description
The first wine in the ‘Special Edition’ series shows that good things also come to those who choose not to wait (and age)!
The idea behind the special edition is to bring consumers a quality Cabernet Sauvignon wine, which has gone through a short barrel-aging process, at an attractive and especially low price. The varieties used to compose this wine are: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Despite its short aging period, the wine has long-aging potential and its flavor will only get better as time goes by. The wine did not go through a filtration process. The 2009 Special Edition is crimson in color and has light scents of berries. The wine is very balanced and leaves a long flavor finish.

Production Process
Following harvest, the grapes undergo cold immersion and gentle pressing prior to a 10-day fermentation process, which takes place at temperatures of up to 30 degrees Celsius. This is followed by full Malolactic fermentation. The wine is barrel-aged for 12 months in a combination of new Seguin Moreau French oak (50%) and American oak (50%).
