Description
This wine is a unique blend made once every few years, in which we combined Shiraz with Cabernet Sauvignon from different years. The Shiraz-Cabernet is composed of a blend of 60% Shiraz from the 2008 vintage, which was aged for one year in new barrels, and 40% Cabernet Sauvignon Premium from the 2007 vintage, which was barrel-aged for 25 months. The wine’s is dark purple in color with light scents of dried fruits. The wine’s flavors develop about an hour after the bottle is opened. The wine is balanced and leaves a long flavor finish.

Production Process
Following harvest, the grapes undergo cold immersion and gentle pressing prior to a 10-day fermentation process, which takes place at temperatures of up to 30 degrees Celsius. This is followed by full Malolactic fermentation. The wine is barrel-aged in a combination of new Seguin Moreau French oak (50%) and American oak (50%).
